Why in the menu editor and not here?
Because that is where a menu item is maintained. A second list somewhere else would be a second source that at some point diverges from the first.
Does the page disappear along with it?
No. The item disappears from the menu; the page stays reachable at its address. Whoever wants to lock the content takes the post permissions.
Does this apply to submenus too?
Yes, per item. A hidden parent item takes its children along.
