What if I name no roles?

Then “signed in” is enough. Without the roles attribute every logged-in user sees the passage.

Is there an inverse as well?

Yes. A second shortcode hides the passage from the named roles and shows it to everyone else.

Where do I find the right role slug?

In the role list it stands under the display name. That is the same value WordPress keeps in the database.
